6 cups chopped peaches skin and pits removed
1/4 cup granulated sugar (more or less depending on sweetness of peaches)
1/2 tsp ground cinnamon
1 tsp lemon juice
1/2 tsp vanilla extract
Place the peaches in a large pot. Stir in the sugar, cinnamon, and lemon juice. Heat mixture over medium heat for about 30 minutes, stirring occasionally. Remove from heat and stir in the vanilla extract.
Using a food processor or emersion blender, puree the peach butter until desired consistency.
Let the peach butter cool completely. Pour into jars and store in the refrigerator. It will keep for about two weeks.
Note: peach butter can be canned. Peach butter is great on toast, biscuits, pancakes, waffles, stirred into oatmeal, yogurt, or used as an ice cream topping!
