Sparkling Cranberries
2 cups fresh cranberries
1 ½ cups sugar, divided
1 cup water
Cranberry Cake
3 1/3 cups (480g) all-purpose flour
2 cups (400g) sugar
2 ½ tsp baking powder
1 ½ cups salted butter 9340g), room temperature
3 eggs
2 tbsp. vanilla extract
1 cup (240ml) sour cream
1 cup (240ml) milk
3 cups fresh cranberries
White Chocolate Icing
12 ounces white chocolate chips
¾ cup heavy whipping cream
¾ cup butter, room temperature
8-9 cups powdered sugar
Step-by-Step Instructions
Sparkling Cranberries
Bring 1 cup sugar and water to a simmer in a saucepan. Simmer until sugar is completely dissolved.
Pour simple syrup into a heatproof bowl and allow to cool for about 10 minutes.
Add cranberries and stir to coat.
Refrigerate cranberries in syrup overnight, stirred a couple times to coat with syrup.
Remove cranberries from syrup and roll in remaining 1/2 cup of sugar. You’ll need to roll them a few times to get a couple layers of sugar on them.
Set cranberries aside to dry for an hour or so.
Cranberry Cake
Preheat oven to 350 degrees. Prepare three 8 inch cake pans with baking spray and parchment paper in the bottom of the pans.
Whisk together flour, sugar and baking powder in a large mixing bowl.
Add butter, eggs, vanilla extract, sour cream and milk and mix on medium speed just until smooth. Do not over mix.
Gently stir in cranberries.
Spread batter evenly between the three cake pans.
Bake 35-40 minutes, until a toothpick inserted comes out with a few crumbs.
Allow to cool for about 10 minutes, then remove to cooling rack to finish cooling.
White Chocolate Icing
Place white chocolate chips in a metal bowl.
Microwave heavy cream until it starts to boil. Remove from microwave and pour over chocolate chips.
Cover bowl with saran wrap for 5-7 minutes.
Whisk chocolate and cream until smooth.
Allow ganache to sit until mostly cool. It should be thick.
Beat the ganache with a mixer for about 2-3 minutes, until smooth and fluffy.
Add butter and beat until it is fully combined.
Slowly add powdered sugar and beat until it is fluffy and the right consistency. Add more cream if needed.
To put the cake together:
Remove cake domes from cakes with a large serrated knife.
Place first layer of cake on cake plate. Spread about icing on top in an even layer.
Add second layer of cake and add more icing on top in an even layer.
Add final layer of cake on top and ice the outside of the cake.
Top the cake with sparkling cranberries and add some around the edge, if desired.
Note: Most cakes are best if they are allowed to settle for at least 12-24 hours after icing. It allows to flavors to settle. This cake will stay moist for several days after being iced.

Intracoastal Realty agents from our Carolina Beach office gathered together to support Martha’s Kitchen. Intracoastal agents were able to serve approximately 60 people and 100 plates of food for the evening. Shirley James coordinated the efforts and planned the participation for the office. Mary Kruszon presented a gift to the child who was celebrating a birthday in addition to the cake that was given for the celebration.
Martha’s Kitchen was started in 2005 by Bob and Ruth Hodge at First Baptist Church in Carolina Beach. The ministry, named after Bob’s mother, was created to feed needy people living on Pleasure Island and anyone else who needs a hot meal. At first, meals were provided every Tuesday.
Bob Hodge and Mike Hall from First Baptist came to a St. Paul’s United Methodist Men’s meeting In March 2012 to see if we would be willing to help. The answer was an enthusiastic YES. With the extra help, Martha’s Kitchen now provides hot meals to anyone in need every Tuesday and Thursday night.
The number of diners varies from 60 to 100 and over 40 St. Paul men and women have volunteered since 2012. Originally, we formed two teams with separate team leaders and service dates. As time went on, we found that there were a number of volunteers who want to participate each time, so while we still have two teams, on paper, all volunteers are welcome to come to each meal we serve.
St Paul’s currently host the dinner on the 2nd and 4th Thursdays each month.

Intracoastal Realty agents and staff participated yet again in the annual Cape Fear Heart Walk with a corporate sponsored team. For the 2015 Cape Fear Heart Walk, Intracoastal Realty also sponsored “The Intracoastal Mile” where agents could sponsor a section of the walk with a donation. The event took place at Mayfaire Towne Center on Saturday, October 17, 2015. Michelle Clark was instrumental in organizing the Intracoastal Realty team and Michelle Clark shared her reasons for walking with agents and staff to encourage support in the fight against the #1 killer in the United States.
The 2 main reasons Michelle participates in the annual Heart Walk are:
1) My cousin’s daughter was born with a hole in her heart in 2013
2) I lost my grandmother to a stroke in 2012
In August 2013, my cousin’s daughter, Mira, was born almost 12 weeks early weighing only 3 lbs 2 oz. She was diagnosed with Patent Ductus Arteriosus (PDA), which is a fancy name for saying she has a hole in her heart. Within the next year, Mira will have surgery to place a small metal coil in the PDA to make the repair.
In October 2011 my grandmother suffered a stroke that left her partially paralyzed, and affected her physical, cognitive and emotional functioning. She passed away after complications in March 2012.
Imagine the impact if we reduce death and disability from cardiovascular diseases and stroke by 20 percent by 2020! I’m participating in the Heart Walk to promote physical activity to build healthier lives, free of cardiovascular diseases and stroke for my loved ones and me.
